Tasting Notes and Food Pairings for De Bortoli’s Heathcote Woodfired Sparkling Shiraz, Grenache and Shiraz

De Bortoli, Wood Fired Heathcote Wines

De Bortoli’s woodfired wines exemplify the essence of Heathcote. They are meticulously tailored, bold, intense, and are delightfully flavoured(*1).

Rooted in the heart of the Heathcote region in central Victoria, varietals grow in deep red, ancient, arid soils, scattered with just enough pockets of limestone to sustain water to hydrate the vines(*1). Fruits ripen for longer than expected for the area which produces small, richly-concentrated fruit(*1).

De Bortoli wines embody the distinct geography and climate of this renowned area. The wines’ elemental and contemplative nature harmonises seamlessly with the timeless art of cooking, making them an ideal accompaniment to rich, bold meals(*1).

An Ancient History: The Story of Tarrengower and Lalgambook

Ancient stories that help us understand the land and history of country have been passed down in oral traditions for generations. The story of where De Bortoli’s Heathcote wines grow is a special place for the Jaara Jaara people and the De Bortoli family who have since come to call this area home.

Sitting humbly looking out over the plains, Tarrengower had grown into a big, wise and proud volcano. Nearby, Lalgambook, an outgoing, spirited young volcano began to challenge the authority and wisdom of Tarrengower. Lalgambook grew impatient and angry as he was ignored by the older, wiser volcano. With all the land and animals looking on, Lalgambook put on a display to intimidate Tarrengower. Tarrengower laughed as Lalgambook spewed smoke and ash into the air. Finding no satisfaction, Lalgambook started throwing big rocks at Tarrengower. The wise, old volcano grew irritated and taunted the little volcano saying his rocks could not reach him. Feeling furious towards Tarrengower, the young volcano erupted using all his energy to spew mountains of smoke and hot lava sky high. But still, Lalgambookdid not reach Tarrengower. Having blown his core, Lalgambook had nothing left(*1,2).

The rocks and hot volcanic lava thrown by Lalgambook formed what we now know as the Guilford Plateau(*1,2).
